Carrot Recipes

 I'm starting a new series on recipes featuring inexpensive grocery items. This post and video are all about carrots.



What are the restrictions for this series? All ingredients need to be budget friendly. If I bought it during the extreme grocery challenge, it's definitely fair game! I'll allow other ingredients too, but my goal is that nothing is overly expensive to acquire.

First up: Carrot cake from Inspired Taste - you guys asked for it, I made a dessert. This is not the cheapest dessert, but when you consider that desserts are luxury items anyway, I hope you'll forgive me for not going a little cheaper. To make this cheaper: omit the pecans and/or raisins (or reduce the amount), or cut the recipe in half and make a smaller cake. 

Carrot Fritters- I was inspired by this recipe from delicious everyday, but I made a few tweaks. I used onion powder instead of spring onions (for ease) and I substituted the coriander and cumin for curry powder, because mine has both in it, but watch out, because not all curry powders are the same.

Roasted Carrots - peel and chop carrots, toss in olive oil, and garlic salt. Should cut easily with fork.

Roasted Carrot Dip - use roasted carrots, add garbanzo beans, garlic salt, and cilantro. Blend until mostly smooth. Serve with bread, veggies, or whatever else you like.

Pickled carrot and radishes - I used this recipe from the kitchen girl, but I swapped the daikon radishes for regular radishes and lowered the amount  and shredded the carrots and radishes instead of using a peeler.

Carrot Cake Oatmeal: I don't have actual measurements, I literally made it up as i was filming, so what you see is what I used.
