Black Bean Enchilada Rice Skillet
This Recipe is great for cleaning out the fridge or using items found in your pantry. It's extremely versatile and gets great reviews from my children!
I'm going to give you a recipe, but please note I don't always make it this way and you don't have to either, it's really more of a guideline.
Ingredients:
1 diced onion
1 diced pepper
1 can diced tomatoes
1 can black beans, drained and rinsed
1 can corn, drained and rinsed
4 C leftover rice (seriously, this amount is just a guess, I never measure the rice, I just use what I have)
1 small can red enchilada sauce
1 small can green enchilada sauce
shredded Mexican blend cheese
Directions:
Saute the onion and pepper. Stir in tomatoes, beans, corn, rice, and sauces. Heat through. If desired, add cheese on top and allow to melt.
