Vegan Unstuffed Cabbage

 Here's another recipe that I tweak a bit almost every time I make it, but this will give you the general idea.

1 lg onion, chopped

1 tsp minced garlic

29-30 oz canned diced tomatoes

8 oz tomato sauce

1/2 C water

1 lb cooked lentils (optional)

salt and pepper to taste

cooked rice (optional)


You can use a T of oil if you want, or you can make it oil free by using a non stick pan and some water.

Saute onion

Add garlic, cook til fragrant

Add chopped cabbage, tomatoes, sauce, lentils, rice, salt, and pepper.

Bring to Boil

Cover and simmer 20-30 minutes until cabbage is tender.
